Don’t worry, I’ll spare you the long (yet surprisingly interesting) history of waffles, and instead dive right into my absolute favorite waffle recipe and the 3 scrumptious variations I turn to whenever I need to reconnect—myself as well as my tastebuds—with my Belgian-Dutch heritage.
I promise these recipes will satisfy your syrup tooth and your diet. But be warned… This waffle recipe is so delicious that the entire breakfast table might fight over every last bite as though it were the 1500s!

How To Make Waffles
To kick things off, I’ll show you how to make waffles that you can eat every bite of without having to change into sweatpants afterward. That’s right, it’s possible to whip up delicious, fancy-brunch-quality waffles that don’t make you feel bloated and won’t buck you off your diet.
But first, here’s another random waffle fact: You may have waffles to thank for the shoes on your feet right now. The breakfast staple actually inspired Nike’s first pair of sneakers. Hence, the waffle sole!

We’ll dive into the details further down, but here’s a quick overview of what we’ll be getting into with this super easy waffle recipe:
After tracking down all the ingredients (flour, salt, baking powder, sugar, eggs, butter, milk and a teaspoon of vanilla… plus, a secret healthy ingredient), you’ll gently mix all the ingredients together in a large bowl until everything is evenly blended together. To get a consistency that would win a born-and-bred Belgian’s approval, you’ll want to be careful not to over mix your matter.
Oh, and for this recipe, you’ll definitely want to avoid using pancake batter. It just won’t come out the same.
5 Tips For Making Perfect Waffles Every Time
- Preheat your waffle iron. Just like a grill or cast iron skillet, preheating your waffle iron allows you to cook waffles to the right texture: golden and crispy on the outside and light and airy on the inside.
- Use non-stick cooking spray sparingly. Most waffle irons have non-stick surfaces, so it’s superfluous to use non-stick spray. Also, many non-stick sprays use non-natural ingredients.
- Mix the batter evenly, not excessively. Over mixing the batter will cause your waffles to become chewy instead of fluffy with a subtle crunch.
- Don’t overfill the waffle iron. Simply put, overfilling the waffle iron is a mess waiting to happen. I speak from (lots of) experience.
- Don’t peek! Yes, I know you really don’t want to overcook your waffles, but almost all waffle makers come with a signal to let you know when your waffles are done. Use your instincts. Trust your Jedi waffle skills. If you really must be sure, poke them with a fork when you take them off the iron.

Blueberry Waffle Recipe

Serving: 6 large waffles (or 8-10 small waffles)
Ingredients
- 2 cups flour
- 4 scoops Super Youth Unflavored Collagen

- 1 tbsp baking powder
- 2 tbsp sugar
- 4 oz blueberries (to fold in)
- 2 eggs
- 6 tbsp butter melted
- 1 ½ cups milk

One last random waffle fact: After selling out of cups, an ice cream vendor at the 1904 St. Louis World’s Fair turned to waffles to satisfy customers. He folded them into the first ever ice cream cones—perhaps the first World’s-Fair-worthy invention actually invented at the World’s Fair! Thanks waffles!
