But forget the typical gingerbread cookie (no offense, sir), because gingerbread truffles are here to turn your holidays up a notch! These easy-to-make gingerbread cookie balls are this holiday season’s biggest hit! Gingerbread truffles are a type of no-bake dessert, similar to a cake-pop or an edible cookie dough. It’s tough to explain just how amazingly delicious gingerbread balls are, because words simply don’t do them justice. However, if I had to put it into words, which I do for the purpose of this blog 🤣, I’d say gingerbread truffles are a cross between a soft gingersnap and a hazelnut lover’s dream.

When I hear the word truffle, I automatically think of some fancy recipe that inevitably takes hours to make. And while truffles are indeed fancy and delicious, these gingerbread truffles are not to be feared. Why? Well, because gingerbread cookie balls take just 10 minutes to make (and absolutely no baking!)

Yes, you heard that correctly. Gingerbread balls take only 10 minutes to make! I honestly could hardly believe it myself, and felt pretty fancy upon introducing my family to my “a la gingerbread balls” (she said in a fancy French accent), but it’s true! 

And many of the ingredients in gingerbread balls are probably ones you already have in your spice cabinet! These particular gingerbread cookie balls make a total of 16, perfect for gifting to friends throughout the holidays, or to win this holiday’s dessert table bake off!

No Bake Gingerbread Bites

Deliciously easy-to-make, no-bake gingerbread bites that are sure to be your holiday party's biggest hit!

Cook Time: 0 min
Total Time: 10 min
Serving Size: 16 bites

Ingredients

  • 1 ¼ cup walnuts
  • 1 cup packed, soft pitted dates
  • 1 cup quick or rolled oats
  • 2 tbsp cinnamon
  • 3 tsp ground ginger
  • 1 ½ tbsp maple syrup
  • 1 ½ tbsp blackstrap molasses
  • ½ tsp salt
  • 1 scoop Super Youth Unflavored collagen
  • Dust with almond flour or powdered sugar, optional*

Steps

  1. Add the walnut pieces and oats to a food processor. Mix until broken down into a grainy flour consistency. If there are a few larger pieces of walnuts left behind that’s ok, but it should be mostly broken down.
  2. Add the dates and process into a crumbly dough.
  3. Add in the rest of the ingredients and blend into a thick, sticky dough you can easily press together between your fingers.
  4. Use your hands to roll the dough into 16 balls.
  5. Place on a baking sheet lined with parchment paper and chill for 20 minutes.
