Jack Johnson was onto something when he wrote his song Banana Pancakes. There’s something so comforting about banana pancakes that makes you want to stay snuggled up inside! The only issue is, which banana pancakes recipe do you make?! There’s so many floating around, it’s hard to know which one to choose. Plus, if you’ve ever made a bad banana pancakes recipe, you know the disappointment and frustration of that first bite after you spent all that time looking for the recipe, making the recipe, and then ending up with a messy kitchen. The hardest part about making banana pancakes is the flip. You know the one. Where you wiggle the spatula under the circle-like blob of batter, hoping and praying that you can flip it over in one toss. With this recipe, everything is a breeze. These easy, healthy banana pancakes are so simple, you don’t even have to mix them by hand! Your blender does all the work. This banana pancakes recipe also only calls for 5 ingredients, 6 if you count the toppings! The easiest part about them though, is eating them.

How To Make Healthy Banana Pancakes

These easy banana pancakes are so simple. First, preheat your pan to medium heat. You want to hear a nice sizzle the second the batter hits the pan, so make sure it’s nice and warm before you start cooking. Next, gather your ingredients and add them to a high-speed blender. You’ll add one ripe banana, two eggs, one cup of oats, one scoop of collagen, and one teaspoon of cinnamon. Blend until smooth, and then pour onto the pan until the batter forms a circle about 2-3 inches wide. Once you start to see the batter bubble, it’s your time! Flip! Once golden brown, plate and repeat these steps until your batter is finished. Top with berries and/or maple syrup, and enjoy!

Most pre-packaged banana pancakes are full of sugar, additives, and even unhealthy preservatives. For this reason, I always encourage people to make their baked goods, pancakes included, from scratch.

Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup oats
  • 1 scoop Super Youth collagen, unflavored
  • 1 tsp cinnamon
  • Blueberries & maple syrup for topping (optional)

Steps

  1. Mix all of the ingredients in a blender until smooth. Pour the batter onto a skillet preheated over medium heat until the batter creates circles about 2-3 inches in diameter. 
  2. Once the batter starts to bubble or until golden brown, flip them over using a spatula.
  3. Plate and top with fresh banana slices, blueberries, and maple syrup
