The Best Healthy Holiday Breakfast Casserole Recipe

Maybe it’s from watching too many Italian movies as a kid, but I’ve always had it in my mind that if you can’t make a great casserole, you’re letting your family (and their significant others) down. Now, I have failed at many recipes, but thanks to my Nonna, I can nail a great breakfast casserole recipe.

It’s probably one of the easiest recipes to make that looks and tastes like it took hours to put together, and years to perfect. Luckily for us, it only takes about an hour and a half, and 9 ingredients (including salt and pepper!). But this isn’t just any breakfast casserole recipe, this is a holiday breakfast casserole recipe! Of course, you can make it all year round, like I do, but it’s especially great for having friends and family in town. For one, because it’s freaking delicious, and two, because it’s easy and only requires one bowl and one pan! Less dishes, less worries.  

How To Make Holiday Breakfast Casserole

Honestly, this breakfast casserole is one of my favorite recipes for its ease. First, gather your ingredients—shredded potatoes, eggs, half and half, grated cheddar cheese, meat of choice, collagen, seasoning and toppings—then grease an 8×8 pan with butter or oil. Next, layer the shredded potatoes at the bottom of the pan and sprinkle with salt and pepper. In a separate bowl whisk your eggs and collagen. Once combined, add half and half, some salt, your cheese, and meat of choice. Pour the contents of the bowl evenly over the potatoes. Then, cover the pan with foil and let it set in the fridge for at least 2 hours, or overnight. Once you’re ready to bake it, preheat your oven to 350ºF and bake uncovered for an hour, up to an hour and a half. Let it rest for 10 minutes (if you can!) and then enjoy the easiest, most delicious holiday breakfast casserole ever!

The Secret To The Best Breakfast Casserole Recipe

I’d like to give all the credit to my Nonna and the secret ingredient being love, buttttt there is a close call for seconds. Hosting your family for the holidays this year? This holiday breakfast casserole is perfect for groups and even easy to make! Everyone will love it!

Cook Time: 90 minutes
Total Time: 95 minutes
Serving Size: 6-8 servings

Ingredients

  • 12 ounces frozen shredded potatoes
  • 6 eggs
  • 1 cup half and half
  • ¾ cup cheddar cheese grated
  • 1 cup of your preferred meat, chopped (e.g., ham, bacon, sausage, etc.)
  • 2 scoops Super Youth collagen, unflavored
  • ½ teaspoon season salt
  • salt and pepper, to taste
  • Green onions for topping

Steps

  1. Grease an 8×8 inch pan and preheat your oven to 350. 
  2. Add the frozen and shredded potatoes to the bottom of the pan and sprinkle with salt and pepper.
  3. In a large bowl, whisk the eggs together with the collagen. Then add half and half, season salt, cheese, and chopped meat.
  4. Pour over the top of the frozen potatoes. Cover with foil and refrigerate for 2 hours or overnight.
  5. Bake uncovered at 350 degrees for 60-90 minutes. Let rest for 10 minutes before serving.
