Low Carb Spinach Pasta

Serving Size: 2 servings

Ingredients

  • 2 scoops Unflavored Super Youth
  • 2 handfuls spinach
  • 1 cup flour
  • 1/3 cup olive oil
  • pinch of salt
  • For the garlic butter sauce - 4 cloves garlic, 3 tbsp butter, 1/2 cup pasta water, salt & pepper, red pepper flakes, parmesan cheese

Steps

  1. Put flour, Super Youth and spinach in a food processor or blender.
  2. Pulse together until the spinach is broken down.
  3. Slowly pour in the olive oil while continuing to run the food processor.
  4. When the dough starts sticking together, take it to your rolling station.
  5. Pull off gumball-sized pieces of dough and roll them into spaghetti pieces.
  6. Then, boil slightly salted water, then place pasta into boiling water.
  7. Boil for approx 1 ½ minutes, or until the pasta floats to the top of the pot.
  8. Next, make your sauce. Start by finely mincing garlic.
  9. Melt down butter over medium heat on the stovetop. 
  10. Add garlic to a pan.
  11. Add pasta water to the sauce ¼ a cup at a time as it cooks.
  12. Add salt, pepper and red pepper flakes.
  13. Put Spinach Pici Pasta in a pan, coating it in the sauce.
  14. Serve in a bowl, topping with parmesan cheese or preferred toppings.
