Are you looking for a delicious and healthy alternative for dinner? Look no further! This Pesto Chicken Stuffed Spaghetti Squash is not only mouth-watering but also packed with nutrients that can boost your health. Let’s dive into the recipe and explore why it’s the perfect choice for your next meal.

Health Benefits:

  1. Spaghetti Squash: This low-calorie vegetable is a great alternative to pasta. It’s high in fiber, which aids in digestion and helps you feel full longer. It’s also rich in vitamins C and B6, manganese, and antioxidants that can boost your immune system and overall health.
  2. Olive Oil: A heart-healthy fat, olive oil is packed with antioxidants and anti-inflammatory properties. It’s known to reduce the risk of heart disease and lower cholesterol levels.
  3. Shredded Chicken: A lean source of protein, chicken helps build and repair tissues. It’s also a good source of vitamins and minerals such as B vitamins, phosphorus, and selenium, which support metabolic functions and a healthy immune system.
  4. Mozzarella and Parmesan Cheese: While cheese is often viewed as indulgent, it’s also a great source of calcium and protein. Mozzarella, in particular, is lower in fat compared to other cheeses, and parmesan adds a punch of flavor with just a small amount.
  5. Basil Pesto: Made from fresh basil, garlic, pine nuts, and olive oil, pesto is packed with nutrients. Basil has anti-inflammatory properties and is rich in vitamins A and K. The nuts and olive oil add healthy fats and antioxidants.
  6. Super Youth Unflavored: This ingredient, typically a collagen supplement, supports skin, hair, and nail health, and may also promote joint and bone health. It’s a great addition to this dish, providing an extra boost without altering the flavor.
  7. Red Pepper Flakes: These not only add a touch of heat but are also rich in vitamins A, C, and B6, which support immune function and metabolism.

Why This Recipe Is a Winner:

This Pesto Chicken Stuffed Spaghetti Squash is a delicious and healthy dinner option that you’ll love. It’s a perfect way to enjoy a nutritious meal without compromising on taste. Give it a try and embrace a healthier, more vibrant you with every bite!

Baked Pesto Chicken Spaghetti Squash

Prep Time: 15 min
Cook Time: 45 min
Total Time: 1 hr
Serving Size: 4 servings

Ingredients

  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • salt and pepper
  • 2 cups shredded chicken
  • 1/2 cup mozzarella cheese grated, plus some for topping
  • 1/4 cup parmesan cheese grated
  • 1/2 cup basil pesto
  • 1 scoop Super Youth Unflavored
  • 1/2 tsp red pepper flakes
  • Basil leaves (for garnish)

Steps

  1. Preheat oven to 400F. Cut spaghetti squash in half and use a spoon to scrape out the loose guts and seeds.
  2. Drizzle each spaghetti squash half with olive oil and sprinkle with salt and pepper. Turn the halves cut-side down on the baking sheet and bake in the oven for 45 minutes until the squash can easily be scraped with a fork.
  3. Meanwhile, prepare the pesto chicken mixture. To a large mixing bowl, add shredded chicken, mozzarella, parmesan, basil pesto, Super Youth Unflavored, and red pepper flakes.
  4. Stir the mixture together until well combined. Set aside.
  5. When the spaghetti squash is done, remove it from the oven and scrape down the insides of each half (it will be stringy like spaghetti).
  6. Add the scraped squash to the pesto chicken mixture and combine.
  7. Divide the pesto chicken spaghetti squash mixture into both squash halves, sprinkle with more mozzarella (or parmesan) cheese, and return to the oven for 5 minutes to melt the cheese.
  8. Remove squash halves from the oven and garnish with red pepper flakes, black pepper, and basil leaves before serving.
