Cauliflower Mashed Potatoes
Ingredients
- 1 medium cauliflower
- 1/3 cup sharp white cheddar cheese grated
- 1 tbsp butter or extra virgin olive oil
- 1 scoop Super Youth Unflavored
- 1/2 tsp garlic powder
- salt & pepper to taste
- 1 tbsp chives chopped
Steps
- Remove the leaves and stem of the cauliflower and cut into several large chunks.
- Add water plus a steamer basket to a large pan then add water and bring to a boil, add the cauliflower.
- Cover and cook for 6-8 minutes, or until tender.
- Remove the cooked cauliflower and drain the pan completely of all water, then immediately return the cauliflower to the hot pan and add the grated cheddar cheese, butter, garlic powder, salt, pepper, Super Youth Unflavored and mash or blend until smooth using a hand blender, top with chives and enjoy!
