Today I’m excited to share with you one of my all-time favorite dinner recipes that’s not only delicious but also super healthy. Trust me, this dish has been a game-changer, especially when I’m hosting friends or just want a wholesome meal without spending hours in the kitchen.

Health Benefits:

Let’s talk about why I love this recipe so much. First off, it’s packed with health benefits. With ingredients like zucchini, chicken, and olive oil, you’re getting a good dose of nutrients, proteins, and healthy fats. Plus, it’s gluten-free and low-carb, making it a great option for those with dietary restrictions or anyone looking to eat a bit healthier.

Let’s Break It Down:

  • Zucchini – the star of this dish & offers a range of health benefits. It’s low in calories but packed with essential nutrients like vitamins A and C, potassium, and antioxidants. Plus, its high water content can help keep you hydrated and promote healthy digestion.
  • Chicken – a great source of lean protein, which is essential for muscle growth and repair. It also provides important vitamins and minerals like B vitamins, selenium, and zinc. These nutrients play a crucial role in maintaining a healthy immune system, supporting metabolism, and promoting overall well-being.
  • Olive oil – rich in monounsaturated fats and antioxidants, which can help reduce inflammation, lower bad cholesterol levels, and protect against heart disease.
  • Garlic & onions –  not only add flavor but also offer numerous health benefits. Garlic has antibacterial and antiviral properties, helps lower blood pressure, and may even boost immune function. Onions are rich in antioxidants and can help regulate blood sugar levels and improve heart health.
  • Cheese – provides calcium and protein, essential for bone health and muscle function. Just remember, moderation is key when it comes to cheese, as it can be high in saturated fats.

By combining these nutritious ingredients, this Zucchini Chicken Enchiladas recipe not only satisfies your taste buds but also nourishes your body, making it a win-win for your health and lifestyle!

This recipe is perfect for those busy days when you want something healthy but don’t have a lot of time to cook. The zucchini serves as a fantastic low-carb alternative to traditional tortillas, and it pairs wonderfully with the flavorful chicken and cheesy topping.

So, whether you’re hosting a dinner party or just want to treat yourself to a wholesome meal, give this Zucchini Chicken Enchiladas recipe a try! I promise you won’t be disappointed. Enjoy!

High Protein Enchilada Roll-Ups

Prep Time: 15 min
Cook Time: 25 min
Total Time: 40 min
Serving Size: 12 people

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large white onion chopped
  • Salt and black pepper to taste
  • 1 scoop Super Youth Unflavored
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 2 teaspoons chili powder
  • 3 cups shredded chicken
  • 1⅓ cups red enchilada sauce divided
  • 4 large zucchini sliced with a mandolin or peeler
  • 1 cup Monterey Jack cheese shredded
  • 1 cup cheddar cheese shredded
  • Sour cream for drizzling
  • Fresh cilantro leaves for garnishing

Steps

  1. Preheat oven to 350ºF.
  2. In a large skillet over medium heat, add olive oil. Once hot, add diced onion.
  3. Sauté onion until golden and brown, about 5 minutes. Add the salt, pepper, garlic, cumin, chili powder, shredded chicken, Super Youth Unflavored, and 1 cup enchilada sauce.
  4. Stir well until combined.
  5. Using a vegetable peeler or mandolin, make thin slices of zucchini. On a cutting board, lay out 4 zucchini slices slightly overlapping. Then, add 2 tablespoons of the chicken mixture on top. Roll up, and transfer carefully to a baking dish. Repeat with the remaining zucchini and chicken mixture.
  6. After that, use the remaining enchilada sauce to top the zucchini enchiladas. Then, add the shredded Monterey Jack and cheddar cheese. Cover the casserole with foil.
  7. Bake for approximately 15 minutes. Uncover the casserole, and bake it for more 5 mins.
  8. Garnish with sour cream and cilantro, and serve.
