How To Make Healthy, No-Bake Snickerdoodle Energy Bites!

Have you ever seen a jar of delicious-looking, but also mysterious, balls in a coffee shop? If you have, you know exactly the confusion and intrigue I’m referring to. 

I go to the same cafe pretty much every morning, so I know what to expect. Then, one day out of nowhere, there was a jar of what looked like balls of cookie dough. It took me forever to finally just try one, and I was thoroughly impressed! But when I found out how much sugar they had, I had to recreate my own. Thus birthing, these snickerdoodle energy bites.

The energy bites at the coffee shop had over 20 grams of sugar! I’d rather enjoy an ice cream cone than a ball that’s gone in less than 30 seconds. I did like that it tasted like cookie dough, so I recreated my favorite cookie–the snickerdoodle. These snickerdoodle energy bites are everything you want from a snickerdoodle—cinnamon-y, sweet, a hint of spicy, and of course, delicious. All you need to make these snickerdoodle balls are eight ingredients, one of which is an anti-aging beauty hack you NEED to know about.

What Are Energy Bites?

Energy bites are balls of protein, superfoods, brain-healthy fats, or a combination of all of the above. Most energy bites, including these snickerdoodle bites, contain some sort of nut butter. This is what usually helps hold the ball together. Lastly, they usually include a variety of spices, natural sweeteners, and flour-based protein sources.

Are Snickerdoodle Energy Bites Healthy?

Traditional snickerdoodle cookies are loaded with sugar and unnecessary additives. That’s why I was so excited when I finally nailed these healthy snickerdoodle balls recipe. They’re so, so tasty, and so much better for you.

How To Make Snickerdoodle Bites

Honestly, I think these snickerdoodle balls are as fun to make as they are enjoyable to eat! Start by warming the maple syrup to help soften the almond butter. Once combined, add the almond flour, Super Youth collagen, oat flour, salt (just a pinch!), coconut sugar, and cinnamon. Mix this all together until the dough is fully incorporated. If it’s difficult to mix, or looks dry, add more maple syrup one teaspoon at a time. In a separate bowl, mix together the rolling ingredients. Scoop small balls of dough and roll until smooth. Then, roll in the cinnamon sugar mixture. Repeat this step for the remainder of the dough, and chill for 15 minutes to firm. Enjoy or keep in a sealed container in the fridge for 3-5 days, or freezer for up to three months. You’re going to love snacking on these snickerdoodle energy bites!

No-Bake Vegan Snickerdoodle Bites

If you like snickerdoodle cookies you're going to LOVE these no-bake snickerdoodle bites! These easy-to-make energy balls are not only healthy, but delicious!

Cook Time: 20 min
Total Time: 30 min
Serving Size: 10-12 balls

Ingredients

  • 2 tbsp smooth almond butter
  • 3 tbsp maple syrup
  • ¾ cup almond flour
  • 1 scoop Super Youth collagen, unflavored
  • ½ cup oat flour
  • good pinch of salt
  • 1 tbsp coconut sugar
  • ½ tsp cinnamon
  • 1 tsp cinnamon (for rolling)
  • 1 tbsp coconut sugar (for rolling)

Steps

  1. Warm the maple syrup (in a saucepan or microwave) and add to a bowl. Mix in the almond butter and maple syrup until well combined.
  2. Add in the rest of the ingredients and mix with a spatula until a dough has formed. It will take a minute to come together. If the mixture is too dry, add more maple syrup 1 tsp at a time.
  3. In another small bowl, mix the cinnamon and sugar for coating.
  4. Take small balls out of the dough using a teaspoon and roll into a ball, then roll the ball in the cinnamon sugar mixture.
  5. Repeat for all of the remaining dough. Chill for 15 minutes and enjoy.
