Soups can seem complicated, but there are actually so many easy soup recipes that come together in minutes. The one I’m sharing today is a classic recipe with a healthy twist, and it’s my go-to when I’m craving soup in a pinch. If you love tomato soup, you’re going to love this red pepper version of one. 

This zesty red pepper recipe is one of my favorite easy soup recipes because it’s made with collagen peptides. This one ingredient helps make it filling, and so good for your hair, skin, nails, joints, and more.

Zesty, Flavorful, and Full of Benefits

Cooking healthy recipes for weight loss can be boring if you make the same dishes every week. This collagen peptides-rich recipe is so far from boring, you’re going to look forward to having it on repeat. The depth of flavors is so delicious, you would never know it’s made with just a few ingredients. Plus, you probably already have most of them on hand already!

The main ingredient is, of course, plum tomatoes. You can buy these fresh or in a can. Tomatoes are a great source of the antioxidant lycopene. They help fight free radicals to support and strengthen your immune system. It also contributes to tomatoes’ bright red color.

The next colorful highlight ingredient is red peppers. This delicious veggie adds a tasty flavor to the tomato base, and is a great source of vitamin C. This vitamin is also great for the immune system. Plus, it helps regulate and support a healthy metabolism.

To make this soup as refreshing as it is, it needs aromatics and spices! Onion, garlic, and chili flakes help contribute to the unreal flavor of this soup recipe. Plus, they’re also great for metabolism.

Cook Time: 40 min
Total Time: 55 min.

  • 2 scoops SY Unflavored
  • 2 red peppers
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • Pinch dried chili flakes, plus extra for serving
  • 200g tin plum tomatoes
  • 100ml vegetable stock
  • Double cream, to serve


  1. Turn grill to high heat, then place the whole peppers onto baking tray and grill for 15-20 minutes, turning until charred on all sides
  2. Put into a bowl, cover and leave for 15 minutes to steam
  3. Meanwhile, heat olive oil in a large pan and cook the onion with seasoning over low heat for 15 minutes until soft, then add garlic and cook for another 3 minutes. Add the tomatoes, stock, SY Unflavored, and chili flakes. Bring to a boil, reduce to simmer, cook for 15 minutes. Serve & enjoy!
